Grille Opens in Laguna Beach Spring 2008
Executive Chef Lindsay Smith-Rosales Celebrates the Opening
of Her Second Restaurant honoring the 20th Anniversary of the
Friendship Shelter
LAGUNA
BEACH, Calif., January 8, 2008 Executive chef Lindsay
Smith-Rosales, named by the Kidney Foundation as one of the
"Great Chefs of Orange County", one of “The
Top Chefs in Orange County Under 40," chosen as one of
the Roosters Foundation's "Culinary Masters," and
lauded by Pete Johnson of AAA's Westways as "at the top
of my "must recommend" list," will celebrate
the grand opening of her second Nirvana Grille
this Spring 2008 in Laguna Beach along with her husband, Luis
Rosales. The city's Chamber of Commerce will kick-off the highly-anticipated
grand opening with an official red ribbon cutting ceremony as
Chef Lindsay Smith-Rosales presents her signature hors d'oeuvres
and a distinctive bliss inspired Nirvana cocktail,
created exclusively for the restaurant. Not content to simply
bask in her own glory, Smith-Rosales is taking this opportunity
to introduce herself while she hosts a fundraiser benefiting
Laguna's own Friendship Shelter.
Bliss inspires not only the drinks but the environment at the
Nirvana Grille grand opening. Taking cues from
their successful Nirvana Grille in the heart of Mission Viejo,
the restaurant's warm, friendly atmosphere draws inspiration
fromits moniker and wondrously creates a seemingly unattainable
haven for the senses. Lindsay and Luis planned and nurtured
their vision of Nirvana as a calm, serene respite
reminiscent of their own home where patrons can comfortably
enjoy, savor and indulge in "Clean California Cuisine."
Hailing
from the Ritz-Carlton and Pascal's, the 28 year-old Executive
Chef, a self-professed picky eater, yearned to establish a venue
that would serve subtle, intriguing flavors. The varied menu
is dedicated to healthy dishes made with sustainable and predominantly
organic ingredients that are sure to delight her guests? palates
as Luis, whom spent 16 years with the Ritz-Carlton and 4 years
with the Montage Resort, provides seamless service within the
front of the house and makes sure everyone who enters is afforded
the evening they deserve.
The
grand opening of Nirvana Grille will celebrate the 20th anniversary
of Laguna's Friendship Shelter, a 501(c)3 not-for-profit organization.
This comprehensive residential program located in Laguna Beach
provides emergency shelter, three meals daily, and a wide range
of counseling and supportive services to homeless adult men
and women from throughout Orange County at no charge. Their
mission is to assist homeless adults in regaining self-sufficiency
and becoming fully productive members of our community.
Since
its inception, more than 5,000 adults have been the recipients
of these vital services. The agency is funded through government
and foundation grants, and the generosity of philanthropic individuals

A
Laguna Beach native and active community member, Chef Lindsay
Smith-Rosales in the past has donated time and effort to "Dinners
Across Laguna" and is eager to support the cause once again.
100% of the profits from the $65 per person Laguna Beach grand
opening will go towards the enrichment of the Friendship Shelter.
Both Rosales; sense of community, desire to recognize local
charities, and wanting to make an overall difference inspired
them to highlight the great strides made by the Friendship Shelter
for Nirvana Grille's official Laguna Beach
launch.
